Here are two light options perfect for a summer lunch for soup lovers
As winter ends and the weather becomes hot and humid, leading to digestive problems for a large number of people. At this time, it is better to consume light food, so here are two recipes which do not contain cream, cheese or flour.
For dinner or lunch these soups will make for healthy eating!
Gazpacho
Ingredients
1½ kg tomatoes
¾ tablespoon Worcester sauce
¾ teaspoon chilli sauce
1 clove garlic (optional)
2 teaspoons sugar
Salt to taste
Accompaniments
1 finely chopped capsicum
1 finely chopped large onion
1 finely chopped cucumber
1 finely chopped tomato
Method
Put the tomatoes in boiling water for 10 minutes. Thereafter, remove the skins and chop. Blend in the liquidiser and strain. Add the Worcestershire sauce, chilli sauce, garlic, sugar and salt. Chill thoroughly. Serve in cold cups with accompaniments in separate cups.

Carrot soup
Carrots have a large amount of carotene, which helps to form vitamin A.
The soup is enriched with milk and dal (lentils) to increase the protein value.
Ingredients
400 grams carrots
1 onion
1 tablespoon moong dal
1 teacup skim milk
Salt and pepper to taste
Method
Cut the carrots and onion into big pieces. Add three teacups of water and the moong dal and cook in a pressure cooker. When cooked, blend in a liquidiser and strain. Heat the milk and add to the soup. Mix well. Serve hot.
